10 min Zoodle Bowl Lunch
'Tis the season for Zucchini! So if you'd like to enjoy your summer garden's bounty (or someone else's), dig on in to this recipe.
It's a light lunch you can throw together fast. : )

10 min Zoodle Bowl
Serves 1, easy to double/3x/4x

In a medium sized fry pan on medium heat, add:
  • 1/2 Tbsp olive oil.
Throw in:
  • 1-2 cloves garlic
  • 1 tsp basil, dried
Stir well.

Add:
  • 1 large zucchini, peeled and spiralized with handheld spiralizer*
  • dash of salt, to taste
  • dash of black pepper, to taste
Sautee for ~3-5min, until to your desired "noodle" done-ness (al dente or softer, your choice, just don't cook it to mush!)

Place in bowl, and add:
  • ~1-2 tsp more olive oil drizzle
  • 6 cherry/grape tomatoes, halved or quartered
  • ~1 Tbsp slivered almonds (almonds are best but these also work: pine nuts, raw sunflower seeds, crumbled walnut halves)
  • spinkle of Nooch (Nutritional Yeast, optional)
Pair with:
  • bread or crackers (your choice, whatever you have available; gluten-free if needed)
  • fruit for a happy finale to lunch; optional
*Handheld spiralizers are easy to find on Amazon. I have one from Oxo that cost less than $15.


This little bowl is more filling than it looks, especially if you finish off with some fruit.
