Baked Potato Hack
An easy way to make bake potatoes that are so moist, you can eat them without anything added! It’s true! I recently visited my family in VA, and they kept commenting on how tender these were. But of course, to keep it more interesting, top them with leftover Chili, Spaghetti, or even hummus.      1/15/25

Method:
Gather your Russets (medium sized ones) - Make as many as you want; then they’re ready for the week. : )
Scrub each potato, and dry well.
Poke all over with fork. 
Rub with small amount of olive oil. (It only takes about 1 tsp for 4-5 potatoes).

Bake at 400F x 1 hour, or until a fork can poke through potato without much resistance.
Slice in half and top as desired. 

These really do come out so moist that you can eat the halves as is (no butter required). But to make it more interesting and to round out a light lunch or dinner, add a topper + pair with a veggie.

Topper ideas to make it a full meal: hummus, or chickpeas sprinkled with tahini and paprika, leftover Chili or Spaghetti sauce- there’s no shame!, black beans + BBQ sauce,  my white bean gravy, etc.
Don’t forget your greens- sauteed kale, raw sugar snap peas, a fresh salad.

To avoid using too much oil, place 1 tsp of oil into a small bowl and use hands to wipe the oil onto each potato.
