
It was 47F when I walked the dog this morning. I instantly wanted to bake these muffins for my hubby to wake up to. Brewed a little "Santa's White Christmas" Barnie's coffee for nostalgia, and ready to start the Saturday!
These feel-good muffins are easy to make and won't give you a sugar rush. 10/12/24

(Makes 6-8 muffins; easy to double recipe)
Preheat oven to 350F
Spray muffin tins with cooking spray.
In large mixing bowl, add dry ingredients:
- 1 and ⅔ c whole wheat flour
- ⅔ c old fashioned oats
- 1 Tbsp cinnamon
- ¼ tsp baking soda
- ¼ tsp baking powder
- ⅛ tsp salt
Mix well.
In separate, small bowl, add wet ingredients:
- ¼ c unsweetened applesauce* (equals ~ 1 kids individual serving applesauce cup)
- 1 Tbsp lemon juice, fresh
- ¾ c unsweetened vanilla almond milk (or soy or rice milk for nut free)
- ½ c maple syrup
Mix these wet ingredients.
Add wet ingredients to dry ingredients and mix again.
Fold in:
- 1-2 c. mixed** berries or blueberries (fresh, or defrosted*** and drained if frozen)
Fill muffin tins ⅔ of the way full. Okay, okay...I often cheat and have them to the top or even overflow...don't tell!
Bake at 350F x 25-30 mins, until knife poked in center comes back dry or with moist muffin bits (not runny batter).
*Tip: To reduce spoilage if you don’t eat applesauce often, instead of buying a jar of applesauce, buy a pack of individual 4oz applesauce cups; they’ll keep in the pantry for around a year.
**If you use mixed berries, use a blend that does not contain strawberries (too big).
***To defrost, I just place them in a colander and run warm water over them, before I do anything else. If still cold when ready to be folded in, I run warm water over them again and drain well.


I was feeling nostalgic for the 90s, when Mom and I would go to Barnie's at the mall, long before Starbucks was on every corner.
