Roast & Toast & Gravy
A peppery Southern style gravy - whipped up in a hurry, without any flour or dairy.
Other vegetables can be roasted, but the ones listed cook fastest.

Variations below
Serves 3-4

Heat oven to 375F.
Line roasting sheet with foil, sprayed with cooking spray. 
Add:
  • 1 bell pepper (any color), sliced in strips
  • 1 medium purple (or yellow) onion, in strips
  • 1 medium squash (yellow or zucchini), in coins
Lightly apply olive oil; toss, repeat.
Lightly sprinkle with:
  • Salt, 
  • Pepper
Roast at 375F for about 20 mins. 
Watch, don’t burn.
Once veg are done, toast bread:
  • (1 -2 slices per person) whole grain, preferably seeded bread* 
To serve, on toast place It’s All Gravy! (below) +
Roasted veg. Eat immediately. 

It’s All Gravy!
serves 3-4

In 3 cup food processor, place:
  • 15 oz can of cannellini beans, rinsed, drained.
  • 3/4 c. unsweet, plain almond milk/unsweetened rice milk if nut free
  • 1/4 -1/2 tsp salt (omit if on low sodium diet)
  • 1/2 tsp black pepper
  • 1 Tbsp soy sauce* (or tamari for gluten free)
  • Pinch of cayenne pepper 
  • 1/4 tsp garlic powder (optional) 
Process until smooth.
Warm in saucepan on low; will thicken.
Add more black pepper, if needed.
Add:
  • 2 Tbsp veg broth or water, if needed, until desired consistency
Notes: *If gluten free, replace soy sauce with tamari; use gluten free bread, or eat over rice or potatoes. Make sure veg broth contains not gluten.

Variation: It’s All Gravy! and Biscuits
Could place Gravy over freshly baked biscuits, and serve with fresh fruit, as Southern breakfast option.

Variation: It’s All (Mushroom) Gravy!
Sautee 1/2 medium onion, diced + 8 oz sliced button mushrooms, until mostly cooked. Then add Gravy, and 
thicken for a few minutes in pan. It’s great over a baked potato with a side of sauteed kale or greens of your choice.

It's All Gravy! is made with a  few simple ingredients in your food processor.
It's all Gravy, Original version.
Original Version with Roasted Veg (Zucchini, Bell Peppers, Onions) on Toasted Bread. (Thus, "Roast & Toast & Gravy".) The picture may look bland but I promise you the flavor is not!


It's All Gravy! Mushroom version. Saute mushrooms and onions prior to adding Gravy from food processor. Thicken in pan. 


Mushroom version over a "baked" potato with a side of sauteed kale
(If you don't like kale, pair with some green beans or broccoli or side salad.)
This packs well for a hearty lunch. (Meal prep!) Halve the potato and pour gravy over top.
Did you know you can "bake" potatoes in your crock pot? Sure, it takes longer, but you don't have to heat up your house by turning on the oven, and you can go run errands while they're "baking". Simply wash and dry your russet potatoes, prick with a fork all over, and lightly coat with olive oil. Cook in crock pot on low x 6-7 hours.
