Gluten-free, Nut-free; makes 9 brownies
Preheat oven to 350F.
Spray 8x8 pan with cooking spray.
In large mixing bowl, mix wet ingredients:
- 3 Tbsp canola oil
- 4 Tbsp unsweetened applesauce*
- 1/2 c. maple syrup
- 1/2 c. vanilla soy milk
In separate medium mixing bowl, mix dry ingredients:
- 1 1/4 c. oat flour** (see note)
- 1/2 c. cocoa
- 1/2 tsp salt
Add dry to wet ingredients.
Fold in:
- 1/2 c. chocolate chips, dairy-free
Pour batter into sprayed 8x8 pan.
Bake at 350F x 25 min, until a test knife comes out clean. In my oven, gooey at 25 min, firmer with a few more minutes. Ovens may vary by a few minutes.
(Note that these will not rise much.)
Notes:
*I like to buy individual single serving cups (like kids eat), because we don’t eat a jar of applesauce fast enough before it goes bad.
**I take 1 1/4 c. old fashioned oats and grind them into flour in my Vitamix, or you can buy store bought oat flour and use only 1 c + 1 Tbsp (since volume reduces after ground into flour). / Make sure to get certified gluten-free oats if your diet requires. As always, check labels carefully if you have sensitivities; you GF and nut-free folks know that these things can sneak in under different names or via cross contamination. I'm not gluten-free or nut-free myself, but do require a dairy-free diet, so I know how it feels to miss out on dessert. I've tried to keep you folks in mind in many of my recipes. P.S. Enjoy Life and Nestle now make allergy-friendly chocolate chips, which are delicious! I currently use Lidl brand dark chocolate ones which have no added dairy.
