Avocado Chocolate Cake
It’s a Cake? It’s Brownies? Who cares, I’m a Superfan! 
This cake contains only 160 calories per slice, is low in fat (12%), yet is tender and moist!
No icing required.

Makes 9 slices

Preheat oven to 350F
Spray 8x8 pan with cooking spray (or line with parchment paper for fully oil-free option)

In a medium bowl, add:
  • 1 and 1/2 c whole wheat flour
  • 3/4 c granulated sugar
  • 1/3 c cocoa powder
  • 1 tsp baking soda.
Stir well and set aside.
To Blender, add:
  • 1 c almond milk (or soy milk for nut-free option)
  • 4 Tbsp unsweetened applesauce*
  • 1 Tbsp Apple Cider Vinegar
  • 4 Tbsp Avocado**
  • 1 tsp Vanilla Extract
Blend until smooth. It will look pale green.
Add wet ingredients from blender to dry ingredients in bowl. Mix well.
Pour into 8x8 pan and Bake at 350F x 25-28 mins, until knife inserted into middle comes out without any gooey bits.

Tips: *I like to keep kid’s single serving applesauce cups on hand for baking; they usually contain 6-8 Tbsp each.
**Use a 1 Tbsp measuring spoon to scoop out the flesh of an avocado.

 Gather your ingredients.

Dry ingredients.
 Once wet ingredients are blended, add to dry ingredients and stir well.

*Don't worry - the cake won't look green at the end. ; )

Pour into 8x8.
Try not to eat half the pan. : )
