
This is one of my favorites. It's something simple yet tasty that I can pull together quickly after a long day at work, or on the weekend when I don't feel like cooking anything.
BBQ Black Bean Burritos- VegWithMandy.com
Serves 2-3 - recipe is easily doubled
First chop, wash, dry:
- Romaine lettuce, ~ 1 cup
Set aside.
In medium bowl, place:
- 1 15 oz can black beans, drained, rinsed.
- 3 Tbsp BBQ sauce of your choice.
Microwave and stir.
To serve, simply take:
- Tortillas*, and top with:
BBQ black beans, warmed,
Romaine lettuce, and
- Guac** -OR- Replace with my Quick Slaw
Notes: *We like Ole's Xtreme Wellness tortillas (60 calories each, great flavor).
**We like buying single serving cups of guac, to avoid spoilage of leftovers we might not finish in a larger container. Alternatively, make my Lazy Guac.

Gather your Ingredients.

Simply add a few Tbsp of your favorite BBQ sauce to the beans and microwave until warmed.
