
Another easy roasted veg meal, with minimal work required other than chopping the sweet potatoes.

This recipe is great in my BBQ Black Bean Burritos (omit Guac), or in a sandwich of BBQ baked tofu strips + Pickle.

This is one of my favorites. It's something simple yet tasty that I can pull together quickly after a long day at work, or on the weekend when I don't feel like cooking anything.

Sloppy Joes - still sloppy, but without meat! Serve open faced on toasted English muffins or whole wheat hamburger buns.

Don't knock it until you try it! You Oughta try this "Ricotta" substitute!
