Lentil Sloppy Joes


Sloppy Joes - still sloppy, but without meat! Serve open faced on toasted English muffins or whole wheat hamburger buns. 
(*Note: Not all English muffins are dairy free - check labels.)

serves 4 

First, stir up Sloppy sauce in a bowl:
  • 1/2 tsp garlic powder
  • 1/2 tsp chili powder
  • 1/4 tsp cumin
  • 1/2 tsp Balsamic vinegar
  • 1 tsp Apple Cider Vinegar
  • 1/2 tsp maple syrup
  • 4 Tbsp BBQ sauce of your choice
  • 6 Tbsp tomato paste
  • 5 Tbsp water
Set aside.
Next, In medium pot, strongly simmer x 8 min*:
  • 1 1/2c. orange lentils in
  • 4 cups veg broth or water
*Fully cooked but not real soggy. Will take longer to cook if using whole (not split) lentils.
Meanwhile, saute until fully cooked:
  • 1 red/purple onion (small), diced
  • 1 green bell pepper, diced
Turn off heat.
Drain excess water from lentils, using fine mesh ladle.
Add lentils to pan with pepper and onions.
Then Add Sloppy sauce.
Stir well. Serve over:
English muffins or hamburger buns, toasted; open faced. Gather ingredients, chop onions and bell pepper, and prep Sloppy sauce. Saute onions and peppers while boiling your lentils. Drain lentils well with a fine mesh ladle (this is important)...  ...then add to onions/peppers pan, along with your Sloppy Sauce. Mix and serve!
