Oughta "Ricotta" Pizza Dippers
Don't knock it until you try it! You Oughta try this "Ricotta" substitute!
Good for a pizza night, but pair with a side salad for a more balanced meal.

Serves 3+

In small food processor, add*:
  • 1 block tofu, firm; pressed, drained of excess water (by wrapping in towel or via tofu press)
  • 2 Tbsp lemon juice, fresh
  • 1 tsp garlic powder
  • 4 tsp basil
  • 1/2 tsp salt
  • 1/2 tsp sugar
Blend until fairly smooth.
Notes: *You may have to process in two batches if you have a small, 3 cup food processor.
**This "ricotta" can also be used in plant-based Baked Spaghetti or Lasagna.

Oughta "Ricotta" Pizza Dippers
serves 3+

In small bowl, place:
  • 4 Tbsp all purpose flour
  • 4 Tbsp water
Stir until just smooth, set aside.
In:
  • small (street-taco sized) flour tortilla, fill with dollop of 
Oughta "ricotta"
Roll into taquito shape. 
RIght before finishing, make thin line of water/flour mixture on edge to make it stick. Then finish rolling, pressing edges together. 
"Toast" taquitoes in cast iron pan on medium heat x 2-3 mins to make them crunchy,  rolling every 30 sec to get all sides.

Dip in:
  • Pizza sauce, store bought, until I perfect my own recipe ; )
Notes: ***I've not tried it yet, but you could consider putting pizza toppings inside the dippers before rolling, such as black olives, pre-sauteed veggies (mushrooms, bell pepper, onions), etc.


 Before finishing rolling your dippers, place a thin line of flour/water mixture (not pictured). This will act like glue to hold them together.

*You may want to lightly warm the "ricotta" in microwave ~10 seconds first, so it's not lukewarm.



 Ready for Dipping in sauce.
