Great lunch - serve with fresh fruit.
Dill-icious Chickpea Salad - VegWithMandy.com
Serves 2-3
In medium mixing bowl, place:
- 15 oz can chickpeas, rinsed/drained, mashed with potato masher. -or- pulsed in food processor; caution not to puree!
- 1-2 tsp Dill herb, fresh is best; dried works.
- 1-2 tsp capers.
Add the following “to taste” /texture preference:
- Vegenaise (vegan mayo),
- yellow mustard,
- Salt,
- Pepper.
- 1 celery stick, diced (optional, for crunch)
Mixed ingredients well in bowl.
Serve on:
- Whole grain bread (We love Dave's Killer bread) after first applying thin layer of Vegenaise (or other plant-based mayo) to each slice -or- with Crackers or pita chips.


Tasty and filling sandwich.
