Then you've got time to make a yummy and filling dinner! (And you won't miss the meat.)
Crunchy Wraps - VegWithMandy.com
makes 6-8 wraps; we usually eat 1-2/person.
Place in 4 separate bowls, each filling ingredient:
- 1 can lard-free Refried beans, stirred well until relatively smooth, warmed in microwave.
- 1 can Rotel, drained
- 1/2 head of Romaine lettuce, chopped
- Lazy Guacamole (recipe below; or store bought*)
Also gather:
- Tortillas**, whole wheat style or thin
To make Crunchy wrap, place tortilla on flat surface.
With knife, cut tortilla from outside to middle; do not fully cut in half.
(If tortilla were a clock, cut from 12 to base of clock “hands”.)
Spread one of the 4 filling ingredients onto 1/4th of the tortilla. Repeat until tortilla is covered.
Then, fold, one layer at a time until a triangle shape emerges.
Repeat until wraps are made. (You may have leftover ingredients to make more tomorrow, depending on family size.
Only make enough wraps for one night; they get soggy by next day.)
Warm pan (preferably cast iron) on medium to med-high heat. Lightly spray pan with oil (optional).
Place wraps onto pan and “toast” for 1-2 minutes on each side to make crunchy.
To serve, Dip in:
- Salsa of your choice +/-
- Taco sauce
Notes: *We love buying single serving guac cups; this prevents spoilage of any leftover guac you wouldn't eat in 1-2 days. Less waste!

In Food processor, place:
- flesh of 1 Avocado
- 1/4 purple onion, roughly chopped
- Juice of 1 lime, fresh
- 1-2 Tbsp liquid from Rotel
- 1/4 tsp salt (reduce if on low sodium diet)
- 2 tsp Cilantro, dried
Process until mostly pureed.
